Built for Baby Food and Jam
Apricot is bought for applications where the fruit has to behave predictably rather than stand out. Baby food, jam, bakery filling and dairy are where most of our volume goes.
What makes it suit those is the screen size. At 0.4 to 0.8 mm the purée is finely sieved with no fibre or skin fragments, which matters more in baby food than in any other category — a particle that a adult would not notice is a specification failure in an infant product.
Acidity sits at 0.9 to 1.5% as citric acid with pH between 3.2 and 3.9. That is sharper than mango and softer than strawberry, which is why apricot works as a base rather than only as a flavour note. It carries sugar in a jam without needing acid correction, and it holds its own in a dairy blend without curdling the protein.
Bostwick runs wide at 10 to 20 centimetres, so the same purée serves a thin nectar line and a thick jam kettle.
One Month to Fill a Year
Egyptian apricot runs through June. One month, and everything we pack for the next year comes out of it.
For a buyer that changes how orders are placed. Volume is committed against the harvest rather than against monthly demand, and there is no second crop to correct a shortfall. Manufacturers running apricot continuously plan the full year before the season opens.
What the short window buys is consistency. Everything in a season comes from the same few weeks of fruit, so variation between batches is narrower than it would be across a staggered crop — the purée you open in February matches the one you opened in August.
We process within hours of picking rather than holding fruit in cold store, which is what keeps the colour at golden orange rather than dulling toward brown. Aseptically packed, the purée holds 18 months at ambient temperature with no refrigeration in transit or storage.
